Hey Mama!

I am so excited to introduce that Tifton Moms will now be offering a weekly meal plan for moms! We know meal planning and cooking can be quite the headache, so we want to take other thing off your plate. With our weekly meal plans, you’ll get five dinner ideas along with the corresponding recipes, 2-3 breakfast ideas (intended to be prepped in advance and last for several days) along with the corresponding recipe ideas, and a printable grocery list. What’s not to love about that?!

Breakfast

First up, we’ve got our breakfast ideas for the week! This week we have three great options that you can prep in advance to make mornings a little easier, and depending on the size of your family, each option should give you 2-3 days worth of breakfast. This week’s breakfast ideas include:

  1. Homemade granola (can be served as cereal with milk or on top of yogurt)
  2. Muffin tin omelets (this recipe calls for onion, bell pepper, spinach, tomatoes, bacon, and cheddar cheese but you can use whatever veggies and/or meat and cheese that you prefer and/or have on hand)  
  3. Lemon Blueberry Muffins (while this recipe does call for some Greek yogurt for some added protein, if you’re looking to make this a higher protein breakfast, you can add some of the protein powder of your choice)

Dinner

Now, onto dinner ideas! This month, we’re trying to use up some items we have a lot of in our pantry, and one of the big ones is rice, so we have several meals that incorporate that.  This week’s dinner ideas include:

  • Copycat Chick-fil-A nuggets: I know, I know, this recipe is a little bit more labor intensive. It’s for a birthday dinner request for my four-year-old this week, which is why I’m choosing something a little bit more time consuming. It is so delicious and a great alternative to eating out though! If you’re looking for a similar recipe that’s a little bit easier, try the copycat grilled nuggets. Still really delicious, but you don’t have to worry about deep frying anything. We usually serve this with French fries that we buy out of the frozen section and a salad or some fruit, but you do whatever you have on hand and works best for your family this week!
  • Ground beef burrito bowl with rice and beans: I don’t really have a recipe for this, but it’s really easy and customizable, which is why I love it. We usually use this Spanish rice recipe, do some black beans in the Instant Pot or use a can, brown up some ground beef with homemade taco seasoning (salt, pepper, garlic powder, onion powder, cumin, oregano, and chili powder), and then whatever fresh veggies or toppings you prefer. Sour cream, queso, avocados, salsa, pickled jalapenos, cilantro, and lettuce are usually what we do. Everybody just picks what they want on theirs, so I have one child who usually just does sour cream, cheese, meat, rice, black beans, and maybe a little salsa. The other child wants all the avocadoes on it she can eat, and then my husband and I load it up with almost everything.
  • Korean beef with rice: I discovered this recipe one day when I was looking for something new to do with ground beef, and it is so delicious and has become one of our family’s favorite meals! We usually serve it alongside some white rice and make stirfry veggies (usually mushrooms and broccoli at our house, but use whatever you have and your family prefers) to serve on the side.  
  • Homemade pizza: This is a recipe my family makes pretty much every week for our weekly movie night. It is customizable and kid friendly, and it’s honestly not as hard or involved as you might think. We love doing this sourdough recipe, but if you’re not a sourdough person, this is a great yeast recipe that we used for years before I got into sourdough. It requires a short rise time, making it a super quick and easy recipe for beginners. But also, there’s no shame in buying the refrigerated pizza dough at Publix or the Pillsbury pizza crust where you would find the cinnamon rolls or biscuits in the refrigerated section. I usually make my own sauce out of a can of tomato paste, equal amounts water, and seasonings like garlic, herbs, salt, and a little pepper, but you can use a regular marinara from the store too and whatever toppings your family likes.
  • Lasagna soup: This recipe is one I have not made myself before, but my sister made once after we had our daughter to bring to us, and it is so delicious. Like I mentioned above, we are trying to use up some of our random pantry ingredients, and I have like half a box of lasagna noodles. Not enough to make an actual lasagna mind you, but the perfect amount for this recipe. Plus, with the cold-ish weather, this is so warm and cozy. We’ll probably serve ours with some homemade sourdough bread, but you can skip that entirely or use a loaf of store-bought French bread.
